House and Garden Recipe with Canto Di Lago = YUM

We were very excited to see our 2015 Canto Di Lago in the Australian House and Garden September issue as a suggested pair with one of their featured recipes. (page 147 if youre curious) 

Our Canto Di Lago is a fantastic food wine - especially when it comes to Italian food. Spaghetti and Canto sounds like a match made in heaven to us! 

Here's the recipe!

Spaghetti with crushed peas, mint & pancetta

Prep 15 Minutes, Cooking 15 Minutes
Serves 4-6

  • 400g dried spaghetti
  • 50ml olive oil
  • 80g mild pancetta
  • 1/4 onion, finely chopped 
  • 50ml dry white wine 
  • 150ml chicken stock
  • 25g frozen peas
  • 1/2 cup coarsely torn mint, plus extra to serve
  • finely grated pecorino pepato to serve

Cook pasta in a large saucepan of boiling water until al dente, about 7 minutes; drain, reserving cooking water. return pasta and 2 tbsp cooking water to pan. 

Meanwhile, heat oil in a frypan over medium high heat, add pancetta and cook for 3 minutes or until it begins to crisp. Add onion and garlic and saute a further 3 minutes or until tender. Deglaze pan with wine, add stock and bring to simmer. Add peas, simmer until tender, about 3 minutes, the remove from heat, season to taste and coarsley crush. Toss pea mixture and mint through pasta, season to taste and serve hot or warm, scattered with pepato and extra mint.

Pair with 2015 Zonte's Footstep Canto Di Lago Sangiovese Barbera Lagerin, $25 - Highly aromatic with snappy fruit, chalky tannins and bright acidity.
